Makes a big brownie
While attempting to create a more nutrient-rich brownie, I ended up creating my new favorite gluten free – vegan brownie recipe ! It’s happening.
Introducing super fudgy, naturally-sweetened, whole grain, healthier brownies made with just a few ingredients.

Ingredients
- One big sweet potato
- 100g oat flour ( basically just oats that you mix into a flour in the mixer)
- 3 tablespoon maple syrup
- 3 tablespoon coconut oil – melted
- 3 tablespoon coconut sugar
- ½ cup cocoa powder
- ½ teaspoon sea salt
- 3 dates
- Walnuts (or any other nut that you fancy)
- Dark chocolate chips
Instructions
- Cut the sweet potato in cubes and cook it with some water in a pot until very tender
- Set aside in a bowl and add the oat flour, dates, maple syrup, coconut sugar, coconut oil, cocoa powder, sea salt and baking powder
- Mix until you have a thick batter consistency (if too thick, add some coconut oil)
- Add some walnuts and chocolate chips
- Put in a square oven pan lined with parchment paper – add more chocolate chips (oh yes!)
- Cook for 15m at 180C°
- Enjoy!
Cocoa powder adds a rich, chocolatey flavor, oat flour keeps these whole grain and healthier than your average brownie, baking powder adds rise, and sea salt brings everything together.
Walnuts and chocolate chips (optional) are added to the top for morsels of melty chocolate and a little toasty crunch with each bite. We highly recommend!
