I got into the blueberry muffin craze back when I spent a lot of time in America. Americans are absolute fans of anything with blueberries. Blueberry smoothies, blueberry pies , blueberry muffins….
Blueberry muffins are also a stample in almost every American diner. They usually serve it toast with a side of butter!

This recipe is made with butter (except for the streusel) but with some buttermilk.

The secret is to mix separately the dry and the wet ingredients and then to mix them together and leave to preparation a bit lumpy (this will give this rumbly texture to the muffins)

Ingredients

For the muffins :

  • 230g flour
  • 1cc salt
  • 60g neutral oil
  • 100g sugar
  • 100g buttermilk
  • 2 teaspoon baking powder
  • 1 vanilla pod
  • 1 egg
  • 200g blueberries

For the streusel :

  • 46g flour
  • 70g sugar
  • 50g cold butter
  • 1teaspoon cinnamon

Instructions

For the muffins : 

  1. Mix the oil, buttermilk, egg and vanilla all together
  2. In another bowl mix together the flour, sugar, baking powder, salt
  3. Mix the 2 preparations together being careful not to overmix
  4. Fold in the blueberries
  5. Put in some muffin mold (that have been greased if not using silicone mold)

For the streusel :

  1. Using your hand mix all of the ingredients together until it becomes a crumbly sand
  2. Before baking the muffins, top them with some if that streusel
  3. Cook the muffins for 22m in a preheat oven at 180C°
  4. Enjoy!!
